Turtle Cookies

Delicious, indulging chocolate cookies - there no other cookie that matches it!

Directions

  1. Chop and roast pecans.
  2. Mix flour, cocoa, salt and soda.
  3. In a separate bowl, cream butter.
  4. Add both sugars and mix until light and fluffy.
  5. Add egg and vanilla, mix.
  6. Add dry ingredients to wet ingredients. Mix, but don’t overmix or you’ll get a tough cookie.
  7. Add 3/4 cup pecans, chocolate and caramel chips. Mix by hand.
  8. ⏳❄️ Chill the dough for 1 hour in the fridge.
  9. Pre-heat the oven to 350 F.
  10. Make balls of dough, put on parchment paper 2 inches apart. Decorate with bits of pecans, chocolate and caramel bits.
  11. Bake cookies 350 F for 10 - 12 minutes until they puff, expand, and the tops are dry.
  12. For ganache, microwave (or otherwise heat, can use residual heat from the oven) the ingredients and mix.
  13. Decorate the cookies with ganache.
  14. Serve slightly chilled with milk.
