Ingredients
- 400g of rhubarb (about 1 bunch)
- 1 1/2 cup white sugar
- 1/2 cup brown sugar
- 3 eggs
- 175g room temperature butter
- 1 3/4 cup flour
- 1 tsp baking soda
- 1 cup shredded cheddar cheese
- 3 heaping tbsp sour cream
- 1/2 tsp vanilla extract
Directions
- Clean and cut rhubarb.
- Line 9x13 baking dish with parchment paper and put rhubarb there in an even layer.
- Pour 1/2 cup of white and 1/4 cup of brown sugar on top of rhubarb.
Batter
- Mix together butter and the rest of the sugars.
- Add in eggs one by one, sour cream, vanilla, mix everything together.
- In a separate bowl, mix together flour with baking soda. Add to the wets.
- Add grated cheddar to the batter.
- Pour batter on top of rhubarb. Even out the batter and bake 350F for 1 hour.
- Chill the pie before serving. Keep in the fridge.
