Rhubarb Pie

Directions

  1. Clean and cut rhubarb.
  2. Line 9x13 baking dish with parchment paper and put rhubarb there in an even layer.
  3. Pour 1/2 cup of white and 1/4 cup of brown sugar on top of rhubarb.

Batter

  1. Mix together butter and the rest of the sugars.
  2. Add in eggs one by one, sour cream, vanilla, mix everything together.
  3. In a separate bowl, mix together flour with baking soda. Add to the wets.
  4. Add grated cheddar to the batter.
  5. Pour batter on top of rhubarb. Even out the batter and bake 350F for 1 hour.
  6. Chill the pie before serving. Keep in the fridge.
