Ingredients
Crust:
- 1/2 cup room temp butter
- 1/4 cup sugar
- 1 cup flour
Filling:
- 3/4 cup sugar
- 2 tbsp flour
- 1/4 tsp baking powder
- 2 eggs, room temp
- 1 lemon
Directions
Crust:
- Beat together butter and sugar until light and fluffy.
- Beat in flour 1/3 at a time until the mixture is soft and crumbly in texture.
- Bake 15-20 min 350F until edges are golden.
Filling:
- Whisk together sugar, flour, baking powder.
- Add eggs, lemon juice and lemon zest. Whisk well.
Assembly:
- After the crust is ready, whisk the filling and pour on top of the crust.
- Bake 10-15 min or until set and golden, 350F.
- Cool for 1 hour before slicing and serving (can dust with powdered sugar). Store in airtight container in room temp up to 2 days.
