Crust:

  1. Beat together butter and sugar until light and fluffy.
  2. Beat in flour 1/3 at a time until the mixture is soft and crumbly in texture.
  3. Bake 15-20 min 350F until edges are golden.

Filling:

  1. Whisk together sugar, flour, baking powder.
  2. Add eggs, lemon juice and lemon zest. Whisk well.

Assembly:

  1. After the crust is ready, whisk the filling and pour on top of the crust.
  2. Bake 10-15 min or until set and golden, 350F.
  3. Cool for 1 hour before slicing and serving (can dust with powdered sugar). Store in airtight container in room temp up to 2 days.
