Ingredients
- 1 zuccini, can use other vegetables
- 1/2 red onion
- 4 potatoes
- firm tofu
- 4 tbsp doejang
- 1 tbsp gochujang
- 1 tbsp sesame oil
- 1 cup hot water
- enoki mushrooms (optional, but very tasty)
- green onion
Directions
- Cube all vegetables, add to a pot.
- Cube tofu as well and add to the pot. Add tap water to cover.
- While the pot is warming up, prepare the spicy mix separately: mix together doejang, gochujang, sesame oil and hot water.
- Once the pot is brought to a boil, lower the heat and add the spicy mix.
- Simmer for 20 minutes, covered.
- Add enoki mushrooms 5 minutes before the end of cooking.
- Add green onion to garnish at the end.
