Ingredients
Crust:
- 1 1/2 cups of cookie crumbs (like graham crackers)
- 2 tbsp sugar
- 1/4 cup melted butter
Filling:
- 24 oz cream cheese, room temp
- 1 cup sugar
- 1/4 tsp salt
- 2 tsp vanilla
- 1 tsp lemon juice
- 3 eggs
- 1/2 cups sour cream, room temp
Directions
Crust:
- Mix crumbs and sugar. Add butter. Mixture should be sand-like.
- In a 9" round tin, form a bottom and barriers with the mixture. Sides should not be too tall.
- Bake 350F, 15 min.
Filling:
- Mix cream cheese until smooth.
- Add sugar, salt, vanilla, lemon juice, mix until smooth again.
- Add eggs one by one.
- Mix in sour cream.
- Pour filling into the crust, bake 350F 15 min, then 300F 1 hour.
- Turn off oven, let cake sit for 1 hour in the oven.
- Take cake out and cool for another hour on the countertop.
- Transfer cake to the fridge and cool for 6 hours.
