Easy to make chicken shovel food. Pairs great with grains like rice.

Ingredients
- 1 yellow onion
- 6 cloves of garlic
- 3 tbsp ginger
- 3/4 cup butter
- 1 tbsp curry powder
- 2 tbsp garam masala spice blend
- 2 lbs chicken
- pinch of black pepper
- 1/2 tsp salt
- 1/4 cup tomato paste
- one 28 oz can of crushed tomatoes
- 1 1/2 cup heavy cream OR one 14 oz can of coconut milk
- 1 cup of cashews (optional, but elevating)
- 1 lime
Garam masala blend from scratch (everything ground):
- 1 tbsp cumin
- 1 1/2 tsp coriander
- 1 1/2 tsp cardamom
- 1 1/2 tsp black pepper
- 1 tsp cinnamon
- 1/2 tsp cloves
- 1/2 tsp nutmeg
Directions
- Chop onion, mince garlic and ginger. Cut chicken into 1" chunks.
- Add butter to the pot, melt.
- Add curry, garam masala, and chicken. Stir, let it cook.
- Add onion, garlic and ginger. Cook until chicken is lightly browned, around 5 minutes.
- Add pinch of black pepper and salt.
- Add tomato paste, stir.
- Add crushed tomatoes, heavy cream OR coconut milk and cashews.
- Simmer for 25 minutes on low heat and stir occasionally. Check for chicken to get cooked inside.
- In the end, add juice of one lime.
- Serve over rice or other grain.
